OUR SPARKLING WINES

We are one of Australia’s only grower-producers of bottle fermented sparkling wine. We make our sparkling wines in the French ‘méthode champenoise’ style, borrowing the winemaking techniques from Champagne : this means we use pinot noir, chardonnay & pinot meunier in various ratios; 100% of our fruit is grown on our own vineyard. We ferment base wines in old oak and re-ferment in bottle. After the second fermentation the wines age on their yeast ‘lees’ from 2.5 – 5 years depending on the wine style. It sounds simple but it’s quite precise – not to mention time consuming & absurdly expensive. But, we wouldn’t have it any other way. The finesse, elegance & character of wines made in this method is worth it.

On freight pricing...

No one likes a shock at the shopping cart so here are our freight prices. We have been hugely affected by the rise in freight costs in the last year so unfortunately, we now have to pass on some of the cost but have still subsidised as much as possible.
