This is our tradition for Christmas breakfast…a recipe by Darren Simpson from the Best in Australia TV show. It’s a ridiculous combination of mashed potato mixed into a batter with finely chopped fresh scallops, which is then fried into submission in butter and eaten with creme fraiche & smoked salmon. Lordy! Add Champagne or sparkling wine in the mix and you’ve really got a memorable breakfast on your hands.
1/2 kg of riced floury potato
4 egg whites
4 tablespoons plain flour
75 ml cream
75 ml milk
200g fresh scallops, cut into pea size pieces
4 tablespoons finely chopped chives
Salt and pepper to taste
Butter & olive oil, for cooking
Boil potatoes, remove skins and put through a ricer
Add all ingredients to cooled potato and mix to a smooth batter.
Cook on a medium hot pan in a mix of butter and olive oil. They can be quite soft so try firming them up in the oven for 10 minutes to set the mix can be useful.
Garnish with creme fraiche, smoked salmon & chives
